Little Red Riding Hood

This recipe reminds me of the story of Little Red Riding Hood when she goes to grandma’s house with a basket containing a cake.

My mother read this book to me every night when I was a little girl.

Ingredients

Para 10 personas

  • 110g pomade butter 
  • 110g sugar
  • 4 eggs  
  • 250g wheat flour  
  • 10g chemical yeast  
  • a pinch of salt
  • 1 lemon zest and 1 lemon juice
  • 5ml vanilla
  • 3 small apple
  • 100g icing sugar for the final glaze  

How to make

  1. Beat the butter and sugar in a deep, wide bowl until you get a creamy, whitish mixture. Add the eggs, one at a time, and mix well before adding the next one. We add the vanilla essence, the lemon juice (reserving two tablespoons for the final glaze) and stir to integrate.
  2. In a separate container, mix the flour, baking powder, salt and lemon zest well. We add the mixture to the previous container, little by little and stirring well so that there are no lumps. Peel and grate the apples and stir gently until you obtain a homogeneous mass. We fill a 28 cm cake mold with it, with the base and walls greased and covered with greaseproof paper.
  3. We place the mold in the lower half of the oven, preheated to 180 ºC with heat up and down, and bake for approximately 45-50 minutes. Let it cool before covering with the lemon glaze, which we prepare by mixing the icing sugar with the reserved two tablespoons of lemon juice.
