Mini Lemon Cakes of “The Game of Thrones”

The medieval fantasy literature saga ‘A Song of Ice and Fire’ has gained enormous popularity thanks to the television adaptation of ‘Game of Thrones’. In the books, George R.R. Martin mentions a multitude of foods and drinks, but if there is one that manages to be very recurring, it is lemon cakes, Sansa Stark’s favourites.

Ingredients

  • 2 lemons
  • 400 ml of water 300g sugar
  • 150g sugar 3 eggs
  • 1 lemon
  • 1 natural yogurt
  • 125 ml sunflower oil 200 g of flour
  • 1 teaspoon yeast

Preparation

  1. To begin, we wash the lemons very well and cut them into thin slices.
  2. Put the water and 150 g of sugar in a saucepan and stir until the sugar dissolves.
  3. When it is well dissolved, add the lemon slices and let it cook over medium heat for 20 minutes.
  4. After time, we take out the lemon slices. We let them cool on a rack until they

are very dry.

  1. For the sponge cakes, put the eggs and sugar in a bowl and beat vigorously until white.
  2. Then we add the yogurt, the oil and the juice of 1 lemon and continue beating.
  3. When everything is well integrated, sift the flour and yeast over the previous mixture, beating gently with enveloping movements.
  4. We grease some cupcake moulds with butter or vegetable oil and flour them a little. We put a slice of lemon in the bottom of each mould. We fill with the mixture up to three quarters of its capacity and place in the oven preheated to 180º, for approximately 20 minutes. It must be placed in the middle part of the oven and with heat up and down.
  5. When they are ready, let them cool, carefully unmould them and let them cool on a rack.
  6. You have to wait until they are cold to serve them.
