Sweets and Pizzas

I chose this recipe because I really like sweets and pizzas.

Cookie Pizza

Ingredients

  • 6 tablespoons unsalted butter, softened
  • 1/4 cup brown sugar 
  • 1/8 cup granulated sugar
  • 1 egg
  • 1/2 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder 
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 a 3.9-ounce box instant chocolate pudding mix (not cook and serve)
  • 1/2 cup semi-sweet chocolate chips

Toppings

  • Nutella
  • Mini marshmallows 
  • Crushed hard pretzels
  • M&M candies
  • Semi-sweet chocolate chips
  • Caramel sauce
  • Chocolate sauce

Elaboration

  1. Thoroughly grease a 10-inch (about 25 centimeters) cake pan with butter or vegetable shortening. You can also line the bottom with a circle of parchment paper to further protect it from sticking. Set aside.
  2. In the bowl of a stand mixer, combine the butter, brown sugar, and granulated sugar until light and fluffy, a few minutes. Add the egg and vanilla extract, mixing well. (You can also whisk these together in a bowl by hand, but the mixer will come in handy later as the final dough is very thick).
  3. In another bowl, whisk or sift together the flour, cocoa power, baking soda, salt, and instant chocolate pudding mix. 
  4. Add the dry mix to the wet mixture in four batches—add a little, mix, add a little, mix, and so on, until well combined. The mixture will be pretty thick. Add the chocolate chips and mix until well combined. 
  5. Press the cookie dough into the cake pan in an even layer. Cover and place in the refrigerator for 1 hour.
  6. Preheat the oven to 350 degrees (175 degrees Celsius). Place the cookie pizza in the oven and bake for 25-28 minutes, until a toothpick comes out clean. Remove from the oven and let cool completely before decorating. 
  7. To decorate the pizza, spread the Nutella (or the icing, etc. of your choice) on top of the cookie. 
  8. If using toasted mini marshmallows, place them on the pizza still in the cake pan and toast them either with a kitchen torch or by briefly placing the cookie pizza in the oven on the “broil” setting.
  9. Sprinkle the pizza with all the other toppings you like and serve.
