Surf y Lemon Pie, refreshing and fun

Making lemon pie reminds me of surfing because both are refreshing and fun. Just like surfing in the sea, the lemon flavor is fresh and full of energy. After a long day surfing, eating a piece of lemon pie feels amazing. Both activities make me feel relaxed and happy.

Lemon Pie

Ingredients

  • 200 g of digestive biscuits
  • 100 g of melted butter
  • 3 lemons (juice and zest)
  • 1 can of condensed milk
  • 3 eggs
  • 100 g of sugar

Method

  1. First, crush the biscuits until they become fine crumbs. Then, mix them with the melted butter. Press this mixture into a baking tin to form the base of the pie. Put it in the fridge for about 30 minutes so it becomes firm.
  2. Next, in a bowl, mix the condensed milk with the lemon juice and lemon zest. Add the egg yolks and mix everything well until you get a smooth cream.
  3. Pour this mixture over the biscuit base. Bake it in the oven at 180°C for about 15–20 minutes.
  4. Meanwhile, beat the egg whites with the sugar until stiff peaks form. When the pie is ready, spread the meringue on top and bake for another 10 minutes until it becomes golden.
  5. Finally, let the lemon pie cool before serving.
