This recipe is dedicated to STEPHANIE KWOLEK. Also Polish, as MARIE CURIE, actually Polish – American, Mrs. KWOLEK excelled in the field of chemistry and invented the strong, thin and versatile fibre known as KEVLAR, five times stronger that steel; with it are made, among other things, coatings and oven gloves, so this material was a revolution in the kitchen and we use it daily. This is why we have chosen a simple oven recipe in which it is essential to use kevlar gloves. We hope you like it.

Ingredients

  • 2 large tomatoes
  • 1 zucchini
  • 1 eggplant
  • 1 large carrot
  • 1 onion
  • 3 medium potatoes
  • 1 red pepper
  • 6 or 7 mushrooms
  • Extra olive oil
  • Salt
  • Ground black pepper

For dressing:

  • 1 or 2 cloves of garlic
  • Chopped fresh parsley
  • A splash of extra olive oil

Peel and chop the garlic. Wash, dry and chop the parsley leaves very finely. Mix with a splash of oil and set aside.
Wash the eggplant very well, cut it into slices half a centimeter thick, season and let it rest for about 20 minutes so that it loses its bitterness.
Meanwhile, wash the rest of the vegetables very well. Peel the carrot and onion and cut them into slices. Also cut the zucchini into slices of half a centimeter. Tomatoes in half, pepper in strips and mushrooms in bite-sized pieces.
Place everything on a tray lined with baking paper, season and add a generous splash of oil. Bake at half height at 180ºC for about 30 or 35 minutes, turning them over or stirring them in half time. Remove from the oven and paint with garlic and parsley dressing. Bake 10 more minutes. Remove from the oven with your heat-resistant KEVLAR gloves and serve.
